Preserving, keeping the aroma and freshness

The secret to always serving fresh dishes lies in the process of their preservation. In the temperature range of + 60°C and + 10°C, bacteria multiply at a great speed, which affects, among others,nthe quality of food. This can show itself as the change in color, as well as the loss of taste and aroma.

This process is prevented by the Rilling blast chilling/freezing technology. Food products are thoroughly cooled to + 3°C, in approx. 90 min., so that bacteria have no chance to develop. Freshness and taste are fully preserved, while the shelf life extends three times. The hygiene and safety of food products are maintained without any hindrance.

Blast chilling and shock freezing process

Food products that are chilled slowly, dry out and lose weight and taste.

During the traditional freezing process ice macrocrystals are formed, which damages the product structure. During defrosting, their texture changes and they lose valuable nutritional value.

Rilling blast chiller / freezers freeze products quickly and thoroughly.

At -35°C in the device chamber, the product core freezes to -18°C according to DIN. The natural humidity in the product is preserved and transformed into ice microcrystals.
This results in a minimal weight loss after the thawing. The color, texture and taste always remain fresh.

The bottom of the chamber, with hygienic roundings, facilitates cleaning and hygiene.
Condensation on the bottom can be easily drained.
After the work is fi nished, the device chamber should be drained. Thanks to the unique »Smart Door Click« solution, the door will open at a certain angle.
The 3-point core temperature probe is waterproof and solidly mounted in the device door. A damaged probe can be easily and quickly replaced.
Smart Probe. The device is designed to automatically
recognize whether a probe has been inserted correctly
inside the product. The program, defi ned in terms of temperature and time, is executed.
Fully hygienic and, at the same time, easily accessible USB port ethernet (RJ45) and RS485 located inh the machinery room. HACCP data, regulations or updates via this port software can be transferred.
The touch control panel with TFT glass has IP53 protection class.
Easy access after opening the engine room cover enables thorough cleaning of the evaporator and condenser.
All PRO and PRO PLUS blast chillers/freezers are adapted to the GN containers or EN6040 pastry trays of different depths.
The frame in the chamber is easy to rearrange so different types of containers / sheets can be used. Optionally, we provide guides for pastry trays.
Full magnetic gasket – the door is profi led inwards to increase energy effi ciency.

Smart Door Automatic for greater effi ciency and safety: The blast chiller/freezer is the only appliance in a professional kitchen where users have to open the door while holding a hot food product.

Thanks to the proximity sensor in the fl oor area, device door opens automatically and hot GN containers or pastry trays need not be set aside. The use is, therefore, much simpler and faster.

Traditional freezing leads to the formation of large ice crystals

Unfortunately, it significantly reduces the quality of both fresh and cooked food products. Prolonged freezing damages the structure of fibers, causes considerable dehydration, and reduces the nutritional value of the product.

Low-temperature slow cooking
The slow cooking function offers programmed cycles. During cooking, control panel displays all the relevant information, e.g. indicates the end of cooking time. This gentle method of food preparation guarantees that the food is cooked evenly and off ers an intensive taste.
The combined cycle
guarantees comfort and saves time. Dishes can be prepared even after
closing the kitchen by choosing, e.g. a low-temperature cooking program, and then they can be automatically shock-cooled or shock-frozen. Not only does it mean greater fl exibility of working time for employees, but also ensures maximum food hygiene.
Smart Level function
intelligent level control allows you to save a defi ned time program for each level of GN / EN guides. As a result, it provides maximum flexibility for a variety of products and dishes. It is available for cooling, freezing and thermal functions.
Proofing
A process in which raw dough is gently warmed and humidified before baking. The right balance of temperature and humidity inside the chamber provides optimal conditions for the dough to rise and the yeast to activate.
SMART STERIL
sterilization takes place by means of ozonation. Ozone oxidizes the cell membrane of microorganisms (including bacteria and mites), destroys them and breaks down into oxygen molecules again. The process requires no chemicals and is mainly used in particularly sensitive areas of food production and preservation. Ozone, called otherwise: „activated oxygen”, is one of the strongest disinfectants in the world (50 times more eff ective than chlorine), and its function is to destroy bacteria and viruses and to eliminate odors.
